Andy Groneman is a 30+ time US Grand Champion, and cooked meals for thousands as part of charity and disaster relief organizations like Operation BBQ Relief. Consistent quality product is key to success in all BBQ endeavors.

Tackling BBQ for the masses. How to get consistent product, and maximize yields in this labor of love!

Join us to learn the secrets of producing moist & tender and properly smoked meats.  

Andy will share his award winning secrets for these which will include:

  • Selecting and trimming the meat
  • Thorough demonstration on prep, including how to prep for KC style brisket burnt ends
  • Marinades/brines/injection – when and how
  • Wrapping meat for additional flavor
  • Doneness and finishing techniques for consistency.

Additional Discussion:

  • Smoking wood selection and fuel choices
  • Cook times and styles
  • Cooking with various cooker types - maximizing capacity to best utilize your pit.
  • Rubs and sauces - proper balance, and flavor profiles

When the class is complete, each student will have learned the processes for:

Chicken - competition style and flavor, but perfect for a cater! - Thighs or leg quarters.

Lamb Shoulder - amazing lamb rolls (including a quick slaw)

Planked Salmon - Great dish for presentation or family style meals

Pork Shoulder - pulled or sliced (Just to eat, no demo)

Beef Brisket - including Kansas City Style Burnt Ends
